The viral vegetarian döner kebab - vegan mince seasoned and rolled, then baked and sliced into strips.

Ingredients

  • 800 g vegan mince (formbar vegofärs)
  • 1 yellow onion, roughly chopped
  • 3 garlic cloves
  • 0.5 dl yogurt (plant-based works)
  • 0.5 dl olive oil
  • 1 tbsp paprika
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1 tsp salt
  • black pepper

To Serve

  • flatbread (libabröd or pita)
  • mixed salad
  • pickles
  • garlic sauce
  • tahini sauce (optional)

Instructions

  1. Blend aromatics: Add onion, garlic, spices, olive oil and yogurt to a food processor. Blend to a smooth purée.

  2. Add mince: Add the vegan mince and blend until fairly smooth.

  3. Roll out: Divide mixture between two sheets of parchment paper. Cover with another sheet of parchment and press out evenly. Use a rolling pin to roll fairly thin - but not too thin or it will stick and be hard to remove.

  4. Form rolls: Remove the top parchment paper. Roll up into logs.

  5. Bake: Preheat oven to 175°C. Place rolls on a baking tray and bake for 30 minutes.

  6. Slice: Remove from oven. Unroll the “kebab” and slice into thick strips.

  7. Serve: Serve in bread with salad, pickles and garlic sauce.

Notes

Mince type: Use a “formbar” (moldable) vegan mince that holds together well.

Crispier strips: For extra crispy edges, pan-fry the sliced strips briefly before serving.
