Three versions of classic Swedish waffles - soft with aquafaba, crispy without eggs, and a gluten-free option.


Soft Waffles (Mjuka Våfflor)

Makes 10-12 waffles

Ingredients

  • 100 g margarine
  • 4 dl wheat flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 5 dl plant milk
  • 0.75 dl aquafaba

Instructions

  1. Melt margarine and let cool.

  2. Mix dry ingredients in a large bowl. Whisk in half the milk until smooth.

  3. Add remaining milk, aquafaba and melted margarine.

  4. Heat waffle iron and brush with oil for the first waffle.

  5. Add 0.75-1 dl batter per waffle (adjust for your iron size).

  6. Cook until golden. Place on a wire rack. Serve fresh.


Crispy Waffles (Frasvåfflor)

Makes 6-7 waffles - easily doubled

Ingredients

  • 100 g margarine
  • 3 dl wheat flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 4 dl plant milk

Instructions

  1. Melt margarine and let cool.

  2. Mix flour, baking powder and salt. Whisk in milk.

  3. Add margarine and whisk until smooth.

  4. Cook 0.75-1 dl batter per waffle until golden.

  5. Place on wire rack to stay crispy. Serve fresh.


Gluten-Free Crispy Waffles (Glutenfria Frasvåfflor)

Ingredients

  • 100 g margarine
  • 1 dl brown rice flour (fullkornsrismjöl)
  • 1.5 dl sorghum flour (durramjöl)
  • 1.5 dl potato starch (potatismjöl)
  • 1-2 krm salt
  • 2 tsp baking powder
  • 4-5 dl plant milk

Instructions

  1. Melt margarine and let cool.

  2. Mix rice flour, sorghum flour, potato starch, salt and baking powder.

  3. Add cooled margarine and room temperature milk. Whisk until smooth.

  4. Let batter rest a few minutes. Add more milk if needed for smoother batter.

  5. Lightly grease waffle iron between each waffle.

  6. Cook until golden. Place on wire rack to crisp up.


Notes

Crispy vs soft: The aquafaba in the soft version adds tenderness. The egg-free crispy versions get their texture from less liquid and resting on a wire rack.

Serving: Traditional toppings include whipped cream and jam, or simply butter and sugar.

Wire rack: Essential for keeping waffles crispy - stacking them makes them soft.
